Grapefruit and Mandarin Oranges in Chamomile Jelly

I saw the inspiration for this post on Foodgawker a while back and the idea has since stuck in my head.  I wanted to make the dish with my own twist so I chose chamomile tea instead of white, agar agar as a vegan alternative to gelatin, and a mix of seedless Mandarin oranges with sweet oroblanco grapefruits, which are hardly tart at all. it’s a shame not being able to eat things like marshmallows, gummi bears, or jello when you are out and about as they contain gelatin.  the good news is it’s easy to replace gelatin with agar agar, a seaweed-based gelling agent.  i picked some up at my local health food bulk bin and while it’s not cheap, thankfully a little goes a long way.  you only need 2 teaspoons for this recipe, a little sugar and your favorite juice. ... Read More
