I love recipes like this, where you can use up all of the bits of things you have on hand. So versatile! It's been bookmarked for the next time I'm craving something sweet yet healthy.

good points maija!

raw food should still be part of most people's normal diet, it's a good source of fiber, vitamins, and enzymes. but everyone is different and they're diets should reflect that. we all have to find our own balance.

it's not very heavy in celery flavor, when browned like that with the other veggies they all just sort of meld into one flavor that isn't distinctive of any of the individual vegetables.

I'd say that raw food at its simplest can be quicker and easier to whip up than almost any other food. For example many raw "cookies" and "brownies" take five minutes to make and with very few dishes to wash afterwards. Many soups, sauces and spreads are the same. And it's a real delight in the summer, when you don't want to turn on the oven, but would still like to make, say, chocolate cake.

Raw food may not be suitable for people with IBS (many who have IBS have problems with a) many raw veggies b) anything fatty, including nuts and seeds). Luckily I don't have that problem despite having IBS, though raw onions, cruciferous vegetables and some other raw veggies do give me some trouble.

Also, if you're allergic to nuts, eating raw might be difficult - not impossible, but not nearly as nice.

The food porn police ought to visit this entry. I mean, pictures of caramel (or syrup, chocolate etc) being poured/drizzled are great and everything, but this post just gave me an overdose! Waah! Now I can't think of anything else.

Just in case you're interested in trying a very good homemade vegan "turkey", I recommend Bryanna Clark Grogan's one. Where I live turkey isn't traditional holiday food, but I make this one for myself for Christmas every year. http://www.bryannaclarkgrogan.com/page/page/1435893.htm

Jerusalem artichokes are my favorite vegetable, and they're wonderful roasted. For Christmas I rolled them in powdered dried mushrooms before roasting and it was great.

I've seen loads of lavender-flavoured recipes recently. I'm planning to make roasted Brussels sprouts today and now I can't decide whether to spice them with lavender or lemongrass (I guess a combination might turn out too exotic)!
