Super Simple Roasted Tomato and Okra

There are some foods that are friends, but I would call tomatoes and okra best friends. They grow in the same season, they have similar textures, they can be cooked at the same temperature, the are both easy to cook, and they taste great together!

Longtime readers of the blog might remember my super simple okra and miso marinara from a back in 2009. The recipes are very similar in that both use less than 6 ingredients and are very quick to whip together. I think both recipes are a testament to how well tomatoes and okra work together.

If you have never tried okra or you don’t like it because you’ve had slimy versions of the vegetable, give this recipe a try. By roasting it the outside gets a bit crispy and dries up most of that distinctive slippery texture okra normally has. Plus, roasting makes these baby tomatoes I picked from my garden extra sweet. All I added was a little oil and spices because these two already taste so good together.

Super Simple Roasted Tomatoes and Okra
about 1 lb of okra
about 1 pint of cherry tomatoes
2-3 tbsp olive oil
sprinkle of sea salt, fresh ground pepper and granulated garlic.

Preheat your oven to 350F.

I consider this one of my “no recipe” kind of recipes. It’s easy to describe and hard to mess up, exact measurements aren’t imporant.

Simply trim the stems off of your okra – keep in mind when you are buying okra that small to medium-sized ones are more tender and sweet. Then split the okra and cherry tomatoes right down the middle.

Lay the veggies out on a large baking sheet. Cover evenly with a few splashes of olive oil, plus a sprinkle of sea salt, fresh ground pepper, and granulated garlic.

Bake for about 45 minutes, stirring at least 3 times during the cooking time. If the edges are not as crispy as you’d like you can crank up the heat to 375F towards the end.

Once cooked, plate and serve immediately, though they also make for decent leftovers too!
