simply cinnamon tea

summer is the season of iced tea.  and what better than a naturally sweet, caffeine-free tea that’s easy to make on the cheap.  all you need is a few sticks of cinnamon, some water and some time on the stove.

depending on how much sap the cinnamon bark contains, the tea will vary in sweetness.  experiment yourself and see what you come up with.

simply cinnamon tea
4 sticks of cinnamon
about 8 cups of water

put about half the water on the stove and bring to a boil.  add the cinnamon sticks and cook on low heat for 15-20 minutes until the liquid is light red.

pour off the water into a bottle or pitcher and refrigerate.  add the rest of the water to the pot and repeat.  you can do this a few times but the later batches won’t be as sweet or flavorful.

the cinnamon sticks will open up and become soft.    at this point most all of their flavor has cooked off so go ahead and toss them.

this is a perfect treat for a summer tea party or picnic in the park.  it will keep well for days in the fridge.

yields about 6 cups

    i love the red color of it! i very rarely brew my own tea (besides the occasional ginger slice in my hot water) but i definitely would like to try it.

    Wow, I’ve nver heard of cinnamon iced tea. I’ve had the hot version, which is delicious.
