fresh cucumber and cilantro dip
it’s officially spring. increased sunlight and higher temperatures allow for better digestion, so my body is naturally seeking fresh fruits and vegetables to detox from a winter of eating slow cooked stews and starchy sweets.
i’ve been searching for simple and refreshing recipes and this one is a definite winner. the cucumbers, cilantro and lemon juice give it a light, fresh, cool flavor, while the avocado and oat milk keep it creamy.
if you have a blender and a few minutes you can make this recipe. it can easily be made raw depending on the type of milk you use, and it would also work well as a chilled soup!
fresh cucumber and cilantro dip
1 large haas avocado
2 cups coarsely chopped cucumber
10 small sprigs of cilantro
2 tbsp lemon juice
1/3 c non-dairy milk or cream
1 tsp salt
throw all ingredients in the blender and blend until smooth. it’s as simple as that!
i used japanese cucumbers, which have thinner, less bitter skins and tiny seeds so i blended the whole thing. if you are using standard cucumbers you can remove the skins and/or seeds if you’d like.
also, i used raw oat milk – recipe to come! – you can make you’re own version out of any nut, seed or grain with these simple instructions.
serve chilled with sliced vegetables, crackers, pita, or tortilla chips.
yields about 3 cups
