vegan cranberry jello

it’s a shame not being able to eat things like marshmallows, gummi bears, or jello when you are out and about as they contain gelatin.  the good news is it’s easy to replace gelatin with agar agar, a seaweed-based gelling agent.  i picked some up at my local health food bulk bin and while it’s not cheap, thankfully a little goes a long way.  you only need 2 teaspoons for this recipe, a little sugar and your favorite juice.  it’s that easy!

vegan jello
2 c any juice, i used cranberry
2 tbsp sugar
2 tsp agar agar

bring the juice to a boil in a small pot.  reduce the heat a simmer and add the sugar and agar agar.  cook for about 5 minutes, make sure all of the sugar and agar agar have dissolved.

pour into small cups for individual servings.  half a cup each is the perfect serving size.

refrigerate for 1-2 hour until firm.  it takes a bit longer than regular jello but is well worth the wait.

yields 4 servings

    I am going to do this. It sounds like the perfect way to get comfortable with agar, which I am not. It is always failing me. Thanks for the nice, straightforward recipe!

    There is no need to buy marshmallows when you can make your own fabulous vegan marshmallows at home.
    The breakthough ingredient to making vegan marshmallows is you need a fluffy mixture into which you beat the jell mixture. Soy protein isolate is what the commercial vegan marshmallow makers use for the fluffy stuff.
