let’s face it, oatmeal can get a little boring. thankfully, oats aren’t the only grain you can enjoy at breakfast time. a while ago i posted about making toasted buckwheat porridge and as a result, a friend recently suggested the idea of cooking brown rice as a breakfast dish.
it’s pretty simple, mostly just brown rice with some soy milk and brown sugar to give it a creamy and sticky oatmeal texture, topped off with nuts or fruit – whatever you enjoy most first thing in the morning. this can be even simpler if you already had brown rice left over from dinner the night before!
brown rice porridge
1 c dry brown rice
2 c water
1 c unsweetened soy milk
1/3 c brown sugar
1 tbsp olive oils
sliced almonds and goji berries (optional)
begin by cooking the dry brown rice in the water, covered over low heat for about 20 minutes. stir frequently. do this until the rice is tender and all of the water has cooked off.
stir in the soy milk, brown rice and olive oil. cook until most of the liquid is gone, or until it’s about as thick as you like your oatmeal.
serve topped with more brown sugar, agave or maple syrup, your favorite nuts, dried berries or fresh fruit. best enjoyed immediately.

I’ve had a brown rice pudding with leftover rice for brekkie before, which is really good with cinnamon and stewed apples–yum!

christabel- i bet this dish would be great with cinnamon and apples. it’s similar to rice pudding but not as rich.

I made a version of this last January when I was staying over at a friend’s place and she told me to help myself to some breakfast. All she had was sugary cereal and instant oatmeal, but I spotted some brown basmati rice. cooked it up in water. added a little soymilk at the end, then topped with banana and cinnamon. Delicious. Simple. Real food!
