green tea almond cookies

i used to throw a lot of tea parties.  i would get a few girls in sun dresses together and ask everyone to bring a dish.  i’d  brew up some tea and lemonade, throw some table cloths on tables in my front yard, and from there the parties seemed to takes care of themselves!

it’s been a while since i threw such a shindig, but making these cookies made me yearn for one.  if you plan on throwing a tea party anytime soon, these little treats would be perfect.

green tea almond cookies
2 1/2 c white flour
1 c oat flour or blended oats
1 tsp baking soda
2 tsp baking powder
1/2 tsp salt
1 c earth balance or vegan butter substitute
1 c sugar
1/2 c packed brown sugar
1/2 dark brewed green tea
2 tsp almond extract
1/2 c almonds

add all the dry ingredients together in a large bowl.

mix the sugars and earth balance in a small bowl.  add in the green tea and almond extract until completely mixed.

add into the dry ingredients and mix well.  add the almonds last.

roll into balls and cook on a parchment covered cookie sheet.

bake for 10-12 minutes at 350F.

serve with a little green tea and enjoy
