super simple collard greens
dark greens are one of my favorite things to eat, but i don’t quite have the stomach to enjoy them raw. i like to lightly steam or sauté greens like kale or collard, and man can it be easy and tasty. this recipe only has four ingredients and can be used for any of your heavy green vegetables.
super simple collard greens
3 large collard green leaves
3 tbsp earth balance or other vegan butter substitute
1/2 a small red onion
1/3 c tamri, soy sauce or liquid aminos
some weeks there are no collard greens at the farmers’ market at all, but recently i was able to get the biggest collard greens i have ever seen. they barely fit in my fridge.
remove the bottom stems from from the collard greens and thinly slice them across. also slice the onion into thin pieces.
heat the butter substitute in a large sauce pan and fry the onions on medium heat for 3-4 minutes until soft.
add the collard greens, pour the tamari over it and cook for 3-4 more minutes until bright green.
scoop onto a plate for immediate serving.
