raw strawberry mango chia pudding

there are several ways to make raw vegan pudding.  i wrote about making chocolate pudding with avocados, you can use coconut meat, or – as i did here – you can use chia seeds, which puff up and become gel-like with water.

add any kind of fruit you’d like, i’ve used a pleasant blend of strawberry and mango, sweetened with a touch of maple syrup.

3/4 c chia seeds
1 1/2 c water
1 c frozen strawberries
1 c frozen mango
1/2 c maple syrup

stir the chia seeds in the water and let sit for a few minutes.  they will absorb the water and become a thick gel.

blend the strawberries, mango and maple syrup until smooth.  slowly add in the chia gel and continue blending until entirely incorporated.

you can eat it right away or refrigerate until it’s thicker.

    yum yum. Travis and I have been eating chia for breakfast every morning. We soak a 3 or 4 tablespoons of chia seeds in the water of a freshly open young Thai coco. Then we add sliced fresh fruit (so far strawberries and nectarines are our favs). We serve up two bowls and I sprinkle spirulina on mine :)
