baked curry yam fries

fries are one of my biggest weaknesses.  i could heat up a pot of oil and fry some myself, but baking them is a lot easier and way less greasy and messy.

plus i find it way easier to season them before popping them in the oven rather than after they are covered in scalding hot oil.  i chose curry–which is a combination of turmeric, coriander, and cumin–because of its pleasant and mildly spicy flavor.

baked curry yam fries
1/2 a giant yam or a whole medium sized one
2 tbsp olive oil
1 tbsp tumeric
1/2 tbsp cumin
1/2 tbsp coriander
1/2 tbsp salt

slice up the yam however large you’d like the fries, just keep in mind if they are too thick they will take longer to cook.  i used a gigantic yam i got at the farmers’ market, so i only needed half of it.

mix all other ingredients in a large bowl.  add the sliced yam and stir until they are all evenly coated.

 

lay them out on a cookie sheet covered in parchment paper or aluminum foil.  try to make sure they aren’t stacked on top of one another so they can cook evenly.

bake at 400F for 45 minutes, flipping them over half way through.

serve warm with something tasty to dip them in, like barbecue sauce, ketchup or even better a peanut sauce!

    I made these last night alongside some baked tofu and kale with some friends.
    The conclusion of the group were that these were the best fries any of us had ever eaten. We even tripled the recipe and they were gone in under a half hour. Thank you!
