avocado, passion fruit and pomegranate salad

avocados, passion fruits and pomegranates have a lot in common.  they all hide delicious fruit away behind tough, inedible skins and you can get them all fresh at the farmers’ market right now.

1 small haas avocado
7 passion fruits
1 pomegranate
the juice of half a lemon

open the pomegranate and remove all the seeds, see the how-to: open a pomegranate post i wrote earlier this week if you need help with this step.

cut open the passion fruits and spoon the seeds into a bowl.

open the avocado and slice it up.

layer the avocado, passion fruit seeds and pomegranate seeds in a cocktail glass.  dress with lemon juice.  i made these look pretty with a bit of lemon and a nasturtium flower.
