sautéd veggie sandwich
i must say, i don’t have a grill, but i wish i did. especially this labor day weekend when it seems like the air is filled with barbecue smoke everywhere i go.
but in lieu of a grill i sautéd up some veggies for a perfect little lunch treat.
sautéd veggie sandwich
4 thin slices of red onion
4 thin slices of bell pepper
half a small zucchini, sliced
1 cloved crushed garlic
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp liquid aminos
1/2 of an avocado
hummus
fresh basil
bread of your choice
once the veggies and garlic are prepped simply sauté with the oil, vinegar and liquid aminos on medium heat until soft
toast the bread and spread hummus on before adding cooked veggies. top with slices of avocado and fresh basil.
i’ve garnished with some basil flowers and a few salt and pepper kettle chips.
so simple, yet so flavorful.
