steamed kale salad with curry peanut dressing
i love kale. it’s tasty and good for you.
like many dark, green, leafy vegetables it’s high in vitamin A. but because A is a fat soluble vitamin our bodies cannot absorb it if we don’t eat it with some type of fat.
that’s why i like to eat my kale in a tasty salad with flax or olive oil. or with any nut will do, especially peanuts. throw some curry in the mix and you’ve got yourself a really kick ass kale salad.
curry peanut dressing
1/3 c natural chunky peanut butter
1/3 c olive oil
1/4 c apple cider vinegar
1/3 c water
2 tbsp liquid aminos
3 cloves crushed garlic
3 tbsp finely chopped red onion
1 tbsp tumeric
1 tsp ground coriander
1 tsp cumin
1/4 tsp cayenne pepper
i find it simplest to put all the ingredients in an empty jar so i can screw the lid on and shake it up. if the mixture is too thick you can add a little more water until it meets you ideal consistency, but keep in mind it will seem thinner when tossed with warm kale leaves.
this recipe will give you more dressing than you will need for one salad, but it keeps quite well if refrigerated.
slice thinly and lightly steam the kale. it really takes no more than 5 minutes over light steam for kale to soften up. beware of over-steaming as it will loose it’s color and subsequently most of its nutritional value.
once soft, let the kale cool for a few minutes before tossing with the dressing.
i served it on a bed of scarlet quinoa with a drizzle of flax oil and it’s also great chilled!
