review: veganyumyum’s smokey miso tofu

like lolo over at veganyumyum, i too feel disappointed when people don’t respect tofu as the flavor sponge it can be. it just takes a little tlc, patience and a lot of marinade to transform the bland, watery bean block into a tasty sandwich ingredient.

so i gave her recipe for smokey miso tofu a go. i really loved her use of liquid smoke, which i’ve never tried before. the only variation was that i used a yellow miso instead of red. i served it up on a maple coriander roll with the suggested vegannaise and spinach, as well as a slice a yellow heirloom tomato.

the final result was terrific. definitely a worthy bacon replacement in a vegan blt or sliced atop a fresh garden salad. it’s a great idea to make a lot extra and keep them in the fridge.
